{ Baking Day }

It was baking day around here yesterday
{Thanks, Traci, for all of your help.}
This is the Cinnamon Bun Popcorn that we made.
The recipe is from Best Bites.
I tripled the it.
It was so easy & so yummy!

Cinnamon Bun Popcorn
12 C popped popcorn (about 1/2 C kernels)
1 C pecan halves, roughly chopped
1 C brown sugar
3/4 t cinnamon
1/4 C karo syrup (or honey makes a good substitution)
1 stick real butter (1/2 C)
1t vanilla
1/2 t baking soda

3 squares almond bark (about 4 oz)

Preheat oven to 250 degrees

Place popcorn and chopped pecans in a large bowl and set aside.

Combine brown sugar and cinnamon in a 2 liter capacity microwave safe bowl. Mix well. Chop butter into chunks and place on top of sugar mixture. Pour corn syrup over the top of everything. Microwave on high for 30 seconds and then stir to combine. Return to microwave and heat for 2 minutes. Remove and stir and then microwave for 2 minutes more.

Remove from microwave and add in vanilla and baking soda. Stir to combine. Mixture will foam and rise. Pour caramel mixture over popcorn and pecans and stir very well so everything is well coated.

Spread popcorn mixture onto a foil-lined jelly roll pan. Place in oven and bake for 30 minutes, stirring every 10 minutes.

Remove from oven and spread out on a large piece of parchment, waxed paper, or foil.

Melt almond bark according to package instructions. Drizzle over popcorn mixture. When almond bark is hardened and popcorn is cool, break into chunks and enjoy!

Neighbor goodies are done & delivered.
The plan for today is to get all of the wrapping done. {fingers crossed}

Ok, first of all. Yum!! I can almost smell it! Second, I find it funny that when people show pictures of something, I tend to take a sneak peak around their homes at the other things in the picture. I can't be the only person that does this. I am so in love with your window seat and all the lovely pillows. I can almost see the rug under the table and I know that i would love that too. Ok, that's it, done stalking through your house. Have a Merry Christmas!

Jo-almond bark is a vanilla flavored candy coating. It is mostly sold in stores around Thanksgiving and Christmas time where I'm from. You could melt some white chocolate and it would be a great substitution.

Jamie-Is the recipe you posted the triple version, or did you triple that? I am thinking this would be a great Christmas gift for teachers and office staff at my little sister's school!

I used Puff Corn instead I of popcorn . In Minnesota, it's made by Old Dutch, but other areas may have something similar. It was very good - I will be making it again!

I just made this and it was super easy. My question is can I freeze it? I want to give it as gifts for our Christmas Eve party, but I need to make it ahead of time. Being that it expires in three days I'm not sure if I can pull it off. If I can start making it now and then freeze it until Christmas Eve that would be great. Any thoughts?

I made this tonight but instead of popcorn, i used rice chex cereal abd after the oven, i coated it with powdered sugar and cinnamon. A.Maze.Ing

Okay SERIOUSLY this stuff is AMAZING!!! I made it for Christmas and several times since. Such a simple recipe and everyone loves it. I was lazy and hate popping popcorn so I went to the store in search of already popped popcorn. I found a brand called "Popcorn Indiana Kettlecorn". It was perfect! I justified the added sugar with the fact that the package said "whole grain" and "all natural". lol ;) Thanks for sharing such a wonderful recipe!!!
